Coconut and pineapple cake
-Sponge cake with 4 eggs:
Ingredients for the cream:
-1 can of pineapple
-1 ½ creamy pudding
-1 teaspoon sugar
-1 teaspoon
-250 g butter
-4 egg yolks
Ingredients for the meringue:
-200 g of grated coconut
-4 egg whites
-1 cup sugar
In addition:
-80 ml whipping cream
-juice of ½ lemon
How to prepare it:
Drain pineapple with juice. Pineapple juice, pour the water, so that it came out 1 ½ cups of liquid. Boil a glass of juice. Add the rest of the sugar, flour and pudding powder, cook like a pudding. Set aside to cool. Eggs blanch. Cream the butter with the egg yolks, gradually add a spoonful of pudding cooled down, constantly mixing. Add chopped pineapple and mix thoroughly. Beat the whites to stiff peaks, at the end of churning adding sugar. Add grated coconut and mix. Transfer to a plate lined with paper. Bake at 180 ° C for about 15-20 minutes.
